These shrimp are raised in the unique brackish-water mangrove ecosystem of Ca Mau, where soil, salinity, and tidal patterns are entirely dictated by nature, with absolutely no industrial feed or growth enhancers involved.
Silver shrimp (Metapenaeus ensis), a native species, are small in size but highly prized for their sweet flavor and robust health. What makes their life cycle extraordinary is how closely it aligns with natural rhythms. During high tide seasons, shrimp post-larvae enter farmers’ aquaculture ponds (locally called vuông tôm) from major estuarine rivers such as Ganh Hao and Ong Doc. They grow and develop in this natural, open environment with no artificial control or interference.
Throughout their growth cycle, the shrimp feed on a naturally rich and biodiverse ecosystem of the mangrove pond – algae, plankton, aquatic plants, crabs, and small fish. As the shrimp mature, their natural instinct during ebb tide is to follow the receding water back into the estuary. This is when local farmers skillfully harvest them using traditional net systems placed at sluice gates – the natural intersection between pond and river. Once harvested, the fresh shrimp are meticulously selected, using only specimens that meet strict standards in size and quality. They are then processed entirely by hand: briefly boiled in sea salt water, and sun-dried over several days to naturally preserve both flavor and color.
The finished product features a vibrant pinkish-red hue, with a firm yet tender texture and a delicate aroma.
